Today, we are in the UFS Test Kitchen with award-winning chef, and James Beard finalist (for three consecutive years), Omar Anani. Chef Anani was recently a contestant on Food Network’s show Chopped. He is now shifting focus. He will be opening a new place in Detroit, to complement his current restaurant, Saffron De Twah.
Chef Anani has a famous chicken sandwich (pictured). He sells so many, that he needs something with a very high capacity to keep up with demand.
“When testing, we found that frying for the first half of the cooking cycle under pressure, and the second half not under pressure, along with increasing the temperature, gave Chef Anani an even more juicy product…and kept the outside crunchy,” UFS Sales Representative Jimmy Lyons said. “We tested it out on our Velocity High Capacity Pressure Fryer and our Combi Oven.”
Our entire team enjoyed having Chef Anani in the UFS Test Kitchen.
“He is so smart,” Lyons added. “His food science knowledge is unmatched.”
